Vegan Chocolate Cake Recipe!

I absolutely love Vegan cooking, but haven't had much time for it in the past few months. After browsing Pinterest, I was inspired to bake this rich and indulgent chocolate cake, and it just happens to be 100% vegan!

You will need:
For the cake
- 1½ cups of all purpose flour
- 3 tablespoons of unsweetened cocoa powder
- 1 cup of granulated sugar
- 1 teaspoon of baking soda/bicarbonate of soda
- ½ teaspoon of salt
- 1 teaspoon of white vinegar
- 1 teaspoon of vanilla extract
- 5 tablespoons of vegetable oil
- 1 cup of water
For the glaze
- 200ml of well shaken full-fat coconut milk
- 100g 85% cocoa chocolate (broken into small pieces)

• Preheat the oven to 180°C (160°C for a fan assisted oven, 350°F & Gas Mark 4).
• Mix the dry ingredients together in a large mixing bowl.
• Create 3 wells (2 small and 1 larger) in the dry ingredients.
• Add the vinegar to one of the smaller wells, the vanilla extract to another and the vegetable oil to the largest.
• Pour the water over the ingredients and mix well until smooth.
• Bake in a greased 8" baking tray (circular or square) for 35 minutes (cooking times vary).
• Slowly melt the coconut milk and chocolate in a saucepan on a low heat.
• Once mixed, liberally drizzle over the cake.
• Enjoy!
 
- Use a toothpick to check if the cake is cooked. It should come out perfectly clean!
- Cooking times vary! Check your cake after 20-25 minutes!
